2 large or 3 small carrots
1 medium or 4-5 small cucumbers
8 grape tomatoes, halved
Zest from 1 lemon
3 Tbsp mint leaves, chopped
Salt to taste
Wash carrots and cucumber(s).
Using a veggie peeler – shave them into ribbons lengthwise.
Toss in tomatoes, lemon zest, mint, olive oil and a squeeze of lemon juice, pinch of salt.
