½ cup whole wheat pastry flour
¼ cup regular oats
¼ cup coconut
½ tsp aluminum-free baking powder
¼ tsp salt
1/3 cup walnuts, chopped
½ cup grated carrots (packed)
¼ cup raisins, soaked in water overnight
¼ cup maple syrup
¼ cup coconut oil warmed 25 secs in the microwave
½ tsp fresh ginger grated
A pinch cinnamon
½ tsp vanilla
Preheat oven to 350ºF (160ºC). and line baking sheet with parchment
Whisk flour, cinnamon, BP, salt, and oats in large bowl. Add nuts, coconut, raisins, and carrots.
In small bowl mix maple syrup, coconut oil, vanilla, ginger.
Add wet to dry ingredients and stir until well combined.
Place 1 Tbsp cookies onto a lined baking sheet and flatten with a fork.
Bake 15 mins.
