Roasted Tomato Pasta Sauce
2 lbs tomatoes, chopped in quarters
4 cloves garlic, chopped roughly
1 onion, chopped roughly
1 tsp salt
2 Tbsp olive oil
Combine all ingredients on non-stick baking tray and toss until evenly coated.
Bake at 350 degrees for about 90 minutes, or until tomatoes shrivel and beginning to dry out.
After it cools, place the mixture in a blender and blend until smooth.
Pour over pasta and enjoy!
