• Mint Honey Cantaloupe


    1 cantaloupe or rock melon cut into large chunks

    ¼ cup coconut oil

    ½ cup honey

    1/3 cup fresh mint, finely chopped



    Preheat grill on medium

    Thread cantaloupe pieces onto 4 skewers.

    In a small saucepan, heat oil with honey until melted, before stirring in mint.

    Brush cantaloupe with oil, honey mixture and lightly oil the grate

    Grill skewers 4-6 mins til brown on all sides
