    Beet & Blueberry Salad


    3 large beets

    1/3 cup fresh lemon juice

    2 tablespoons honey

    2 tablespoons olive oil

    1 tablespoon grated ginger

    4 cups fresh blueberries

    1 cup chopped walnuts (toasted)

    1/2 cup chopped fresh mint



    Ideally, precooked beets are best.

    Whisk together lemon juice, honey, oil, & ginger.

    Dice the beets, combine with blueberries, walnuts, and mint.

    Toss with the vinaigrette and serve.
